Growing up on the Matsu Islands, Chen initially took up wrestling as a hobby. Her journey into boxing began when she met coach Ke Wen-Ming. Impressed by her talent, he convinced her to switch sports. Chen's career is marked by numerous accolades. She became the first boxer from Chinese Taipei to win a gold medal at the world junior championships in 2013. She has also received multiple awards, including Best Female Athlete at the 2020 Sports Elite Awards and Best Rookie Athlete in 2014.

In 2022, she won gold in the light middleweight category at the Asian Championships in Jordan despite competing with a right hand injury. Additionally, she received the Best Sport Spirit Award at the 2022 Sports Elite Awards and an Education Award from the government of Chinese Taipei.
