Gibbons Burton, also known as "Gem," resides in London and is married to fellow judoka Euan Burton MBE. She pursued higher education in Exercise and Health Science and Sport Studies at London Leisure College, Greenwich Community College, and the University of Bath.

Her career boasts numerous achievements, including winning her first senior medal, a bronze at the 2009 World University Games in Belgrade, Serbia. She was named Sky Sports Sportswoman of the Month in December 2015 and received the BBC Radio London Young Sports Woman of the Year Award in 2006.

Gibbons Burton has faced several injuries throughout her career. In February 2016, she suffered a right knee injury during the Paris Grand Slam. Right shoulder surgery and ankle injuries limited her competition time post-2012 Olympics. She also broke her wrist in 2013 and her thumb during the 2012 Olympics.
